Cinnamon Quinoa Granola

I’m kind of obsessed with granola. I ALWAYS have it in my kitchen it’s pretty much my favorite thing ever. I had bought quinoa granola before, but I’ve never made it myself until now & I’m so glad I did. It’s crunchy, crumbly, sweet, & has a cinnamon kick!

2 cups gluten free old fashioned oats
1/2 cup uncooked quinoa
1/4 cup agave
1/4 cup honey
1 tbsp coconut oil
2 tbsp coconut sugar
2 tbsp chia seeds
1 heaping tsp of cinnamon
Pinch of salt

Mix ingredients in a large bowl (I let them sit for about 10 minutes to let the liquid ingredients really soak in) & cook for 1 hour at 225° turning the granola every 20 minutes.

Vegan Blueberry Crumble

Vegan Blueberry Crumble

Blueberry crumble for Fourth of July festivities made with blueberries I picked at a local farm! Loved making these awesome treats. Isn’t it perfect when the base mixture doubles as a crumble?!

For the base/crumble:
2 1/2 c old fashioned oats
1/4 cup wheat flour
1/2 c honey
1/2 c coconut sugar
1/4 c coconut oil (melted)
1 tsp almond extract
Handful of chopped almonds
Pinch of sea salt

For the blueberry filling:
2 c blueberries (fresh or frozen)
1/4 cup coconut sugar
1 tsp cornstarch
1 tbsp lemon juice

Mix crumble ingredients & filling ingredients in separate bowls. Press crumble mix into the bottom of a pan, saving some to sprinkle on top. Spread filling mix over the base evenly & sprinkle the crumble on top. Bake at 350° for 55 minutes.

Like your own little slice of apple pie. It’s clean, easy, & perfect for breakfast.

For the oats:
1/2 c old fashioned oats
1/2 c light vanilla almond milk
1tbsp chia seeds
1 scoop vanilla @questnutrition protein powder
1/2 tsp vanilla extract
1 tsp cinnamon+ 1/2 tsp baking powder
((I also added chopped pecans but totally optional))

Core an apple, fill with oats sprinkle with granola and cinnamon and bake at 375° for 30 minutes. Serve with vanilla greek yogurt & honey!

PB&J Baked Protein Oats

IMG_8537I’m going to be honest here. I don’t even like oatmeal, but these baked oats have a fluffy cake-like texture & are perfect breakfast fuel.

Ingredients:
1/2 c old fashioned oats
1/2 c light vanilla almond milk
1 tbsp chia seeds
1 scoop vanilla @questnutrition protein powder
1/2 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp baking powder
((I also threw in some walnuts))

Topped with microwaved raspberries and peanut butter. Preheat oven to 350°. Mix ingredients into a nonstick pan & top with melted almond butter and melted raspberries (30 sec in the microwave). Bake for 30-40 min.
